Howzit, tonight we had smoked stuffed mahi. I played hooky yesterday and went offshore. We got some ahi and some aku, yellow fin and skipjack tuna respectively. We went by a log and got a nice mahi. I filleted the chicken and smoked the thicker piece and stuffed it with shrimp and crab meat stuffing. I sprinkled some fresh parmesgan cheese and some lemon and it was awesome.
